    • Big Daddy Red

      Type: Red Blend
      Varietal: Blend

      Dark purple in color with a nose of blackberry jam melded with creamy vanilla aromas and a touch of tobacco. Rich on the palate, it has smooth tannins intertwined with ripe plum and berry flavors - similar to an off-dry Merlot. The finish is long and fruit-forward, with the perfect amount of toasted oak.

      Varietal: Petit Verdot

      A dark, rich wine with wonderfully concentrated flavors of juicy blackberry and blackcurrant with smooth, gripping tannins and an elegant structure leading to a magnificent, boldly oaked finish.

    • Amarosso

      Region: Italy
      Type: Red Blend
      Varietal: Molinara, Corvina, Rondinella

      This wine is made Amarone-style - famous in Italy for its deep red color, high alcohol and pronounced tannins. The process involves harvesting the grapes late in the season, then allowing them to dry out on straw mats. This allows a portion of the water in the grapes to evaporate, leaving behind concentrated flavors and sugars. The grapes are then pressed and fermented into wine. The result is a bouquet of rich flavors of plum, chocolate and hints of raisins. This wine can be aged for quite a while and it will continue to improve over time.

      Varietal: Nebbiolo

      A dry, burly and assertive wine with dark cherry iridescence. Intense and robust with notes of strawberries, a hint of dark tar, and floral aroma complemented by rich, earthy truffles.

      Varietal: Cab Sauv., Merlot, Cab Franc

      This is the California version of a great red Bordeaux. The word "Meritage" was created by a California winemaker to represent our New World version of a Bordeaux blend. It is the combination of "merit" and "heritage" and pronounced like the word "heritage." This wine is fruit forward when served young, but let it age a year or two and the bouquet of the wine will be filled with deep red cherries, tobacco, and a hint of smoke.

      Region: Italy
      Type: Red
      Varietal: Barbera

      This is a very approachable wine that offers higher acidity and lower tannins. It is medium-bodied with a sour cherry nose and a bit of earthiness. Bright, red fruit flavors of cherry and cranberry, with a hint of spice, tie it all together. Fresh acidity and smooth silky tannins make this a wine that can easily be enjoyed with or without food.

    • Aussie Fusion

      Region: Australia
      Type: Red Blend
      Varietal: Grenache, Syrah, Mourvedre

      The blending of these three grapes is a classic and make for a blend of length, power, and fruitiness. With its strong flavor and aromas of black fruits and bold tannins, this wine will develop impressive finesse and complexity after a year in the bottle.

      Region: Chile - Maipo Valley
      Type: Red
      Varietal: Carmenere

      Deep crimson, with dark cherry aroma, red fruits and berry notes running to a smoky, spicy finish with notes of dark chocolate and tobacco. With medium body and moderate tannins, Carmenere drinks well young and improves with age.

      Type: Red Blend
      Varietal: Merlot, Zin, Petite Sirah, Cab Sauv.

      Like a true mosaic, the varietals in this wine each contribute their individual personality to create a harmonious blend. Aromas of red fruit with an undertone of smoke and spice. Flavors of juicy blackberry, raspberry, spice and smooth tannins give way to a lingering finish.

      Region: California - Stags Leap District
      Type: Red
      Varietal: Merlot

      Located in the Napa Valley, Stags Leap is named after a jagged outcropping of steep rock and the legend of a leaping buck. It is the original American Viticulture Area (AVA) that was designated on the basis of its unique soils. The Merlot grapes from this district produced a wine that offers light warm oak accentuated a spicy aroma with a soft, supple and fruity palate of plums and red berries. Rich, round flavor provides an elegant lingering finish.

      Region: Australia - Barossa Valley
      Type: Red
      Varietal: Shiraz

      The Barossa Valley is Australia's quintessential wine region. Located in South Australia, Barossa Valley is one of Australia's oldest wine regions dating back to 1841. This wine exudes aromas of robust blackberry, peppercorns and smoked meat. Full-bodied yet smooth with big, dark, peppery fruit and plush texture on the palate.

      Grapes harvested in the Tuscan region of Italy, this wine consists of 3 varietals: Cabernet Sauvignon, Merlot and Sangiovese. It is Italy's answer the the great Bordeaux blends and can be described as a full-bodied wine with firm tannins, notes of cherries and currants with a delectable finish.

    • Vieux Chateau Du Roi (VCR)

      Varietal: Grenache, Syrah, Mourvedre

      The classic Rhone Valley blend, this wine demonstrates why the Pope vacationed in this part of France every summer during the 13th century! A balance between fruity and earthy, this GSM blend offers a bit of candied fruit from the Grenache grapes, blueberry and plums from the darker Syrah grapes, and a some floral aromas will waft in your mouth from the Mourvedre.

      This is a lighter-bodied red accentuating aromas of black pepper spice, licorice and dark cacao.

      Grown in some of the original vineyards planted in the Napa region, this wine proudly shares its rich heritage in making this area one of the most premium wine-making regions in the world. A vibrant wine with bright flavors of cherries and ripe strawberries. The finish has hints of chocolate and spice.

      Varietal: Malbec

      Dark, inky purple color and ripe fruit flavors of plums, black cherry and blackberry give an almost jammy character on the palate. Smoke, earth, leather, wild game, tobacco and black pepper along with intriguingly spicy notes make for an interesting medley of aromas and flavors, and layers of complexity.

      Atlas Peak is the most infamous growing area for Cab in the Napa Valley. Award-winning wineries have taken advantage of the near-perfect growing conditions in this region. This wine makes its mark by showcasing the complexity and flavors developed by the surrounding terroir. On the first sip, a colorful and complex bouquet will greet the palate with flavors of deep red fruit wrapped by earthy tones of mushrooms, vanilla and blended oak. The tannins are muted and integrated into this well-balanced wine. The lengthy finish is accented with intimate notes of bacon and French Oak.

All sparklings are produced in the Méthod Charmat, in which a cold secondary fermentation occurs in stainless tanks and then bottled under pressure. The grapes are grown in the fertile San Joaquin Valley of California. The soil composition of the vineyards consists of rich loam with alluvial deposits from granite sources of the Sierra Nevada mountain range which aids in drainage. French Columbard is the second most widely planted wine grape in California. It is known for its ability to retain its natural acidity and give balance to cuvees. It is a distinctive grape that reflects the purity of the vine and shows true expression of its simple characteristics. These marry up perfectly in our lineup of all of our sparkling wines.

      Our cheese varieties include:

      • Manchego: Crafted from sheep’s milk, crumbly consistency and complex flavor, aged 12 months
      • Smoked Gouda: a unique blend of buttery Gouda and mild cheddar. Naturally smoked with hickory and hardwoods. Rich, creamy flavor
      • Fontina: This Swedish-style cheese has a smooth texture, and a mellow, nutty, slightly tart flavor
      • Blanc Grue Gruyere: earthy cheese, made with milk from small family farms in Wisconsin. Has a complex flavor with a hint of cashews
      • Goat Cheese with thyme: A tangy and creamy goat’s milk cheese. It has a rich, earthy flavor that recalls the grasslands of France’s rural Deux-Sèvres region. A fresh cheese that spreads easily.
      • Herbed Mozzarella: Creamy Mozzarella Cheese, coated with an aromatic blend of basil, oregano, rosemary, bell pepper and garlic
      • Brie: Imported from France, where this ripened delicacy evolved and is said to have been used as a form of royal tribute. French Brie has a bloomy rind and creamy interior
      • Provolone: A semi-hard cheese with a sharp, picante taste. Aged for a minimum of 4 months.
      • Havarti with dill: Made in the traditional Scandinavian manner, this is a rich and buttery, semi-soft cheese enhanced with the flavor of dill
      • Cheddar: Sharp Wisconsin cheddar. Aged for nine months and selected by expert cheese graders at the peak of flavor, this distinctively sharp yet balanced cheese evokes the grassy dairy land of its origin

      Our meat varieties include:

      • Traditional Genoa Salami: Hand-crafted according to century-old Salumiere traditions, our Genoa Salami boasts a robust flavor from an expert blend of pork and beef with peppercorns
      • Peppered Salami: Hand-trimmed pork blended with wine and Italian style seasonings and hand-rolled in coarse black pepper for a rich, peppery flavor. Avoid wines high in alcohol and tannins as it will accentuate the alcohol such as a Cabernet Sauvignon. A better choice is a Pinot Noir
      • Bianco D’Oro: A rich blend of coarsely ground pork with wine and Italian style seasonings, dry cured in the traditional Old World manner. With a subtle, complex flavor
      • Chorizo: This pure pork sausage is dried and cured with paprika in the traditional way
      • Capocollo: Also called Capicola, or Coppa. A traditional cured Italian meat specialty made from pork shoulder. The flavor is enhanced with subtle seasonings and patient aging of this dry cured product for a minimum of four months in natural casings
      • Prosciutto Di Parma: Imported from Italy, this prosciutto is aged over 12 months for a fragrant and delicately sweet taste. Salt is the only added spice
      • Finocchiona (Fennel) Salami: coarsely ground pork and toasted whole fennel seeds slowly fermented for a traditional Tuscan style flavor
      • Sopressata: An Italian classic that blends hand-trimmed, coarsely chopped pork with savory spices crafted and naturally aged in the Old World tradition. Gives a Mediterranean flair to any cheeses
    • General Pairing Selections

    • Dry red wines, such as our Amarosso, Loren or Atlas Peak Cab, work well with both hard cheeses and yellow cheeses. Sweeter wines, such as the Concerto, Almond Sparkle, or Son-Of-a-Peach, love to be matched up with softer creamy white cheeses. Have fun experimenting with a flight of tastings and different cheeses. Wine and cheese rarely argue with each other!
